Valentine’s Day is coming up, and what better way to say “I love you” than with a homemade Chocolate Covered Strawberry Ice Cream Sundae? (Or maybe you’re just saying, “I love dessert.” No judgment.) Using our True Scoops Vanilla Bean Ice Cream Mix, this sundae combines creamy homemade vanilla bean ice cream packed with crispy chocolate-covered strawberries, and a luscious white chocolate candy shell. It’s as easy to make as it is to devour—perfect for date night, family fun, or treating yourself. Here’s how to make it happen.

Serves 2-3
You Will Need:
- True Scoops Vanilla Bean Ice Cream Mix
- 1 Cup Half & Half
- 1/2 Cup White Chocolate Chips
- 1 Tbsp Coconut Oil
Start by mixing up the True Scoops Vanilla Ice Cream Mixaccording to the instructions on the package. Once the ice cream has been in the freezer for an hour, crush a handful of crushed chocolate-covered freeze-dried strawberries and scatter them generously on top. Gently stir them into the ice cream with a chopstick (or similar) so they become evenly distributed. These little bursts of fruity chocolate add the perfect crunch and flavor boost to the ice cream.
When the ice cream has finished freezing, you can make the the candy shell. Melt 1/2 cup of white chocolate chips and 1 tablespoon of coconut oil in a small bowl, in the microwave in 30 second increments. It should take about 1 minute total. Stir until all the chocolate has melted and the oil is combined. It should be warm, but not piping hot.
Scoop your ice cream into a dish and then drizzle on the white chocolate shell. Before it firms up, sprinkle on more crushed chocolate covered freeze dried strawberries. The shell will harden into a satisfying crackle that makes every bite feel like unwrapping a sweet little gift. Bonus: It looks stunning, so go ahead and snap a photo—your Instagram followers will thank you.
